Chef Maurice, born in the French Quarter, brings over 30years of experience from world class kitchens like Commander's Palace to small "mom and pop" kitchens of family and friends. When asked how he describes his signature dishes- ..."I tend to mix mostly African, Indian, French and Spanish herbs and spices with what I learned in my 7 year apprenticeships under Italian chefs in the Quarter." having lived in new orleans most of my life I am always leary of out of town creole restaurants but not here the food was superb and I felt right at home.
