The Guelaguetza is the passion of Oaxaca throughout the year. This festive and generous spirit extends to other areas, making it the most famous celebration of its kind in Mexico.
Gastronomically, Oaxacan food is a blessing from the union of Spanish and Indigenous cultures. Pre-Hispanic ingredients like chocolate, squash, tomatoes and the immense variety of chilies, along with Spanish and Arabic spices, are essentials in Oaxacan cuisine. The imaginative combination of these and other indigenous ingredients, as the traditional ways of using them, makes this region an irresistible and sensual delight for gourmets.
