Restaurant Description

The Guelaguetza (from the zapotec word "guendalizaa") between the villages in Oaxaca means "mutual help" or "Shared Offering".

As a natural consequence, this word today also represents the maximum celebration of art and culture in Oaxaca. The Guelaguetza is celebrated annually in the month of July. Communities from within the state of Oaxaca gather in the city to present their regional culture in the form of music, costumes, dances, and food in front our thousands of curious spectators. The Guelaguetza is the passion of Oaxaca throughout the year. This festive and generous spirit extends to other areas, making it the most famous celebration of its kind in Mexico.

Gastronomically, Oaxacan food is a blessing from the union of Spanish and Indigenous cultures. Pre-Hispanic ingredients like chocolate, squash, tomatoes and the immense variety of chilies, along with Spanish and Arabic spices, are essentials in Oaxacan cuisine. The imaginative combination of these and other indigenous ingredients, as the traditional ways of using them, makes this region an irresistible and sensual delight for gourmets.

At Guelaguetza Restaurants, our dishes consist of only the best recipes of traditional Oaxacan cuisine. Our recipes are incredibly labor intensive, elaborated with the most authentic ingredients brought directly from our homeland. In working directly with Oaxacan merchants, we are able to preserve the authenticity as a highly respected and satisfying craft.

We highly recommend one our six award-winning moles; Mole Negro, Rojo, Verde, Coloradito, Amarillo or Estofado. Also, our Clayudas, Chiles Rellenos, Tazajo, Cecina, Chorizo, Empanadas, and Tamales de Mole.

Buen Provecho!!!!
