SiLa, an acronym for Silver Lake, is a neighborhood Bistro featuring an eclectic mix of lighter fare drawn from the traditional palate of various cultures. SiLa will offer a seasonal menu based on fresh, local products. In this age of globalization, enabling access to cuisine from all over the world, SiLa's chef will explore dishes from around the globe while embracing the surrounding community by using products from local farmers and fish markets. The culmination: a uniquely Cal-American twist on traditional bistro fare. SiLa is in the right neighborhood at the right time, offering fresh, quality, fine dining selections at reasonable prices in a charming, non-pretentious setting.

It is estimated that over 60 ethnic groups reside in Southern California. Cal-American defines a style allowing broad strokes in using a wide range of products. By blending the concept of "bistro" (a word of Russian origin meaning "fast") with the French tradition of quality and the abundant variety of California products, SiLa's Cal-American bistro will offer a diverse, quality traditional-style menu all its own. Both food and wine will draw from California's rich cultural heritage.

The emphasis on Cal-American and local fare has SiLa's team searching the West Coast -- mostly California & Oregon -- for smaller local vintages customers would not likely find in stores. This "green" practice also saves resources by avoiding delivery from afar, and supports family owned and operated wineries providing excellent vintages to the diner while keeping costs down. SiLa will offer wine pairings to further enhance the culinary experience. Duck confit tacos might be paired with Tandem Peloton, a delicious zinfandel meritage. Tuscan Tart paired with DiBruno Sangiovese of Santa Barbara sums it all up at meal's end -- a dessert from Italy with a wine from up the road.
