Just as most chefs desire to open their own restaurant at some point in their career, I always thought that it would be sooner rather than later in life. Fortunately though, it was later. Later, because of what only time can do. Just as it mellows, matures, refines and enriches wines; so too, it contributes to all the necessary abilities required of a chef or owner. My Italian culture has without a doubt been the most instrumental building block of my passion for food.

When we last visited this restaurant, the service was deplorable. We never did get all our food, and a waiter not assigned to our table had to get our check. The food we got was good, but we practically had to get it from the kitchen ourselves.
