The largest Vietnamese restaurant in Boston, with a menu to match, Pho Pasteur is the perfect place to experience pho, the popular noodle soup, from which it takes its name. But there are other Vietnamese delicacies to sample. Goi tom thit is a refreshing salad of cabbage, shredded carrots, fresh mint, poached chicken and shrimp, tossed in rice wine vinegar and lime juice. Banh hoi is steamed vermicelli noodles that you wrap in softened rice paper rounds to make your own spring rolls. Add grilled beef or shrimp paste, steamed on slices of sugar cane. Bun is a one-bowl meal of vermicelli noodles topped with fried spring rolls, beef, pork, chicken or fish. Mix everything together with either a peanut dressing or a fish-sauce-and-lime dip. Vegans will find a large selection of vegetarian dishes. The fresh spring rolls with tofu are especially good. So is the tofu sautéed with ginger and roasted peanuts.
