According to Chef Fremiotti, the endeavor was a natural fit. "Bistocchi's has a great name in the area and over the years has upheld many of the same principles that I uphold today. I don't view my coming to Bistocchi's as taking over, but more as a torch being passed as we try to stay true to our hopes, beliefs and traditions."

As for the menu, many of Bistocchi's classic dishes remain, however, Chef Fremiotti has fashioned a new menu in the tradition of rustic Italian cuisine. "I wanted to show that fine dining doesn't mean expensive dining," explains Fremiotti. "So I've come up with some dishes that don't depend on the most expensive ingredients, but rather the freshest ingredients of the finest quality. The restructured menu features a wide selection of homemade pastas and soups, vegetarian and gluten-free options, plus suggestions for wine and beer pairings with dinner. A delectable assortment of homemade desserts includes a family recipe for limoncello passed down from generation to generation. Diners are welcome to visit for a late night dessert and coffee.
