Organic produce and all-natural products are used in almost all of Agave's dishes. Platos tradicionales include enchiladas and tamales, either rojo or verde. Tortas, or hot sandwiches, include choices like torta Hawaiiana and torta Ahogada, a carnitas-and-beans sandwich in a tomato-based chile sauce. Molcajete entrees are the house specialty and is a Mexican version of a mortar, used to crush and grind spices and to prepare salsas and guacamole. Molcajetes include chicken or beef with cactus, green onions and cheese, or a vegetarian variety with zucchini, corn and cheese. Finish your meal with a traditional Mexican dessert like Arroz con Leche or fried ice cream, and don't forget to try one of the restaurant's specialty tequila drinks, made from the Blue Agave.
