Thoa Nguyen, the Seattle chef and restaurateur behind Chinoise Cafe and The Islander, is proud to unveil her latest concept, Thoa's (pronounced "twahz"). Nguyen's first Vietnamese restaurant represents a return to her roots with a contemporary interpretation of Vietnamese cuisine. Vietnamese cuisine is light and refreshing, using crisp, uncooked vegetables, subtle seasonings, fresh herbs, and unique flavor combinations.
