Mike Hawari's green-hued falafel is what all falafel must now be judged by. His fatoosh salad is made of big chunks of lettuce, tomato, onion, cucumber and dried pita bread, which absorbs the vinegary dressing and still stays crunchy. Tabbouleh, chopped parsley mixed with cracked wheat, tastes as vibrant as it looks. Kebabs are excellent, as is a dish of sauteed liver.
