All of our meats are slow-smoked (when we say slow, we mean slow! Some cuts get almost 16 hours of cooking time!) Over smoldering coals made from a combination of oak, hickory and fruitwood. By the time we've trimmed, slathered, rubbed and smoked these tasty cuts of beef, pork and chicken we've developed a warm and fuzzy feeling for each piece of meat we serve.
