From the first time I set foot into my mother's small kitchen, it was the beginning of a long quest for passion and knowledge of food. I remember being fascinated by the smell and aromas that came from her kitchen.
Over the years I learned that the essence of good Indian cooking revolves around the appropriate use of the aromatic spices.
The skill lies in subtle blending of a variety of spices to enhance, rather than overwhelm, the basic flavor of a particular dish. Indian good relies on the balance of the spices in which it is cooked.
They say that "the proof of the pudding is in the eating", however, I think with today's changing tastes, we should say "the proof of the curry is in the eating". You will realize the true impact of this phrase when you experience the delights from my restaurant.
